The inside is not one temperature
Treating a refrigerator as a single space leads to spoiled food. Cold air sinks, and opening the door lets warm air in. The back of the lower shelves is therefore the coldest place and the door shelves the warmest, by a wider margin than most people expect. Perishables stored in the door spoil early regardless of their date.
What goes where
Once you know the temperature distribution, placement follows. Items sensitive to temperature swings, like milk and eggs, belong inside rather than in the door. Door shelves suit drinks and condiments that tolerate fluctuation. Crisper drawers are engineered to hold humidity, so vegetables stored elsewhere wilt much faster.
- Door shelves: drinks, sauces, condiments
- Upper shelves: cooked food and leftovers
- Lower shelves: raw meat and fish
- Crisper: vegetables and fruit
The real reason raw meat goes on the bottom
The advice to store raw meat and fish lowest is about more than temperature. Packaging leaks, and liquid runs downward โ stored higher, it contaminates everything beneath. Dripping onto ready-to-eat vegetables or cooked food is exactly how cross-contamination happens, so the bottom shelf is a hygiene rule, not a preference. A tray underneath is safer still.
Loading affects your power bill
Fridge and freezer should be filled in opposite ways. A fridge needs air circulating to cool evenly, so around 60โ70% full works best; packed tight, cold air cannot reach the back and the compressor runs longer. A freezer is the reverse โ frozen contents themselves hold the cold, so a full freezer warms less when opened.
- Fridge: fill to 60โ70% for airflow
- Freezer: the fuller the more efficient
- Cool hot food before putting it in
- Reducing door-open time is the most direct saving
Arranging to waste less
Food spoils in refrigerators mainly because it is out of sight and forgotten. Moving newer purchases to the back and older ones to the front cuts waste substantially. Writing the opening date on packages removes reliance on memory, and clear containers make contents visible at a glance.
